SNACKS FOR A KID FRIENDLY CINCO de MAYO

Mexican food is one of the easiest cuisines to introduce to children.  Cooking staples like beans and rice are simple, yet delicious. Cinco de Mayo is a time for great food and family celebration and this recipe for healthy homemade tortilla chips and kid-friendly guacamole can be used all year round. The best part is that the kids can do most of the work!

Kid-friendly Guacamole

2 avocados, peeled and pitted

1 tomato, cut into quarters or chopped if mixing by hand

1/8 teaspoon salt

Black pepper to sprinkle

Pulse ingredients in food processor for about 20 seconds or let kids mash ingredients by hand until slightly chunky.  Season with salt and pepper to taste.

Homemade Tortilla Chips

4 corn tortillas, cut pizza style into 8 wedges each

1 Tablespoon olive oil

Salt to taste

Preheat oven to 400 degrees. Let kids brush olive oil over tortilla wedges and spread out onto baking sheet. Sprinkle with salt. Bake for 10 minutes, flipping once until crispy and slightly brown. Remove from oven and let cool. Chips will continue to harden once removed from oven.
